Salmon skewers, green bean mousse

Preparation

1. Prepare and clean the ingredients

2. Place the filets in a single layer, add the oil and the chopped onions

3. Cook in a steam oven at 56°C for 1h

4. Mix the salmon for 2 min, add canola oil and the liquid cream, season

5. Add the Gourmet bites and mix

6. Pack in a heat-sealed container

7. Pasteurize: 120°C, 30 min

8. Rapid cooling

PRESENTATION 

1. Cut the salmon preparation in cubes

2. Place them on a skewer

3. Add the green beans purée

4. Reheat the dish up to +63°C

ACCOMPANIMENT

1. Prepare and clean the ingredients

2. Cook the green beans in a steam oven at 85°C for 45 minutes

3. Mix the green beans, add the liquid cream
