- Whole eggs: 3Kg
- CRYSTAL'VIA: 0.150kg
- Flour: 0.200Kg
- Orange Blossom: 0.015Kg
- Baking powder: 0.008Kg
- Melted butter: 0.100Kg
- Milk: 0.050Kg
Basis
- Prepare and clean the ingredients
- Melt the butter in a saucepan over low heat
- Mix the eggs with CRYSTAL'VIA until the mixture whitens
- Add the orange blossom and the milk, mix
- Add the flour, the baking powder and then the butter, mix
- Let stand 15 min
- Packaging: a heat-sealed silicone mould
- Bake at 240°C for 5 min
- Lower the temperature to 200°C for 15 min
Presentation
- Unmould the Madeleines and serve
